The term “sauté” in French translates to “sauter”, which means “to jump”. Actually the food doesn't jump, but you need to keep it moving in the pan when sautéing, so it doesn't stick or dry out. Stir-frying is another type of frying. The most commonly used pan is the wok and the food is cooked with high heat, stirred and tossed quickly in oil that can survive the high heat, such as peanut oil. For best results, use a minimum amount of oil. Pan frying and deep frying are similar cooking techniques. The food is cooked over moderately high heat until the middle is cooked, leaving it juicy with a crunchy golden brown exterior. The food is usually coated with bread crumbs or a combination of the crumb coating and an egg wash to protect the food from the heat. Pan fried food is as the name implies cooked in a skillet with only about one inch of cooking fat, while deep fried food is totally immersed in the cooking fat.

Baking and roasting really mean the same thing. The food is cooked in a closed oven with dry currents of hot air. Most people assume that you roast meat, and bake cakes and breads. So is ham baked or roasted?! It really doesn't matter. Roasting usually involves a large cut of meat, so you will need a large roasting pan that will fit in your oven. The sides should be low enough so that air can circulate around the food freely. When you bake foods, you are usually using small portions of food. Casserole dishes, bread loaf pans and pie pans are all used to bake foods.

Stewing and braising are cooking methods using tough, sinewy cuts of meats such as chuck, shoulder, brisket and stewing hens. The meat is cooked using moist heat and is cooked slowly in a covered pan for a long period of time. These tough cuts of meat cook down to being very tender, and the meat's sinew and fat melt down into a rich gravy. There's some confusion about the difference between the braising and stewing methods, but many books say that braised foods are first browned on the outside and then braised by adding a small amount of water to the pan. Stewed food however doesn't have to be browned, and is cooked in enough water to cover the whole cut of meat or poultry. Whatever you call it, most people like this way of cooking because the meat turns out tender, and the gravy is rich and tasty.

Boiling and poaching are also similar cooking techniques. The food is immersed into a hot liquid and then the liquid is brought to just below the boiling point of 212 degrees and maintained during the entire cooking process. The pan can be covered or left uncovered. Poaching is similar except the water is kept at a lower temperature than when boiling. Therefore the food cooks more slowly, and the poaching liquid and the food being poached exchange flavors. You can use this flavorful poaching liquid to make tasty gravies, sauces and soups.

Steaming food is becoming a popular cooking technique since no fat is used, and the food's nutrients are preserved. The food is cooked by the heat of moist steam. The easiest method of steaming food is by putting a steamer insert into a large saucepan, and filling the pan with water until it almost but doesn't quite touch the insert. Then place the food into the steamer insert, cover, and boil the water until the food is cooked.

Grilling and broiling are cooking methods involving cooking food over or under high intense, dry heat one side at a time. This high heat sears and browns the surface of the food and helps keep the natural juices inside of the food. Only tender meats that can withstand this high heat should be grilled or broiled. Most people like to grill outdoors on the barbeque grill during the summer, but you can broil inside all year long in your stove with great results.

The last important cooking method is microwaving. The microwave is an extremely popular appliance in today's kitchens. It's a clean and fast cooking method that doesn't heat up the kitchen. The food is cooked by high frequency radio waves. Temperature doesn't come into play with microwaving; timing does. You can microwave a lot of foods but some, such as “fried food” or foods that need to be browned on the outside do not fare well in the microwave oven.
